There was a lot of discussion between Marco and me as to whether a Polish should be considered a traditional Chicago hot dog and while a Chicago style hot dog and a Polish are two very distinct items, I am of the opinion that they should both be considered Chicago staples. With that in mind for the tradition category, the Kimski scored 2 out of 3 stars for maintaining a traditional Polish profile because it used Dijon mustard instead of yellow and not quite enough caramelized onions. The taste and the quality did hold up, but it is not one that I will be rushing back to have again.
